  • Great as Aperitif or paired with just about anything Champagne is extremely flexible in general, some of my favorites with this wine are lamb and pork. Try steak too, believe it or not.

Medium salmon color with crushed clam shells, gunpowder, plum, cherry, toasted orange zest, ginger, and coffee. Dry and crisp on the palate nicely balanced and will improve in bottle for quite some time. Patience will be rewarded.
