Clear pale yellow in the glass with light aromas of lemon, grass, apple, menthol and stone.

Soft and quiet on the palate,  dry with fresh acidity. This wine disappears quickly.

I paired this wine with a lot of family and seafood.

Specifically King Crap legs and Shrimp with pasta. I made pasta with butter, garlic and fish sauce. This wine paired beautifully.  Here is the recipe I started with Vietnamese Garlic Noodles

You can tweak the recipe to your taste, I use less soy sauce or remove it completely. I also find that taking the noodles out of the water a bit firmer than usual and letting them cook a little longer in the butter bath makes them absorb the flavors more effectively. The restaurants that inspired the recipe are great if you are in the San Francisco area.

This wine family in the village of Chavignol has history in the area going back to 1380.  They are making brilliant and age worthy Sancerre. If you want to jump into top Sancerre this producer is a good place to start.

Clear bright yellow in the glass, hesitant aromas of lemon, lime, mineral, flowers and grass.  This wine is drinking nicely, some time will help it to open a bit more and a slightly warmer serving temperature (50°F) will help the aromatics show more strongly. This wine is dry with fresh crisp acidity and is light on the palate with flavors of lemon, stone, and melon.

Wine paired with friends. It worked very well!
